I made these on St. Patrick's Day when we had dinner at our friends' house (the highlighted post is from her & her sister in law's blog, Scrappy Love...check it out!) I used the Andes Baking Chips as garnish on my "Shamrock Shakes", but because it was only used as garnish, I had about a half bag left over. So, today, Ellie & I made some delicious brownies!
box mix brownies for 9 X 13 pan (or homemade...but you know me, I "keep it simple")
1/2 tsp mint extract
leftover Andes Baking Chips
Prepare box mix according to directions (adding eggs, oil, water accordingly) and also stir in the mint extract
Bake according to directions
Immediately after the brownies are out of the oven, sprinkle Andes Baking Chips over the top. Let cool completely so that Baking Chips harden. Enjoy!

Chocolate Chip Cookie Dough Brownies
These. Were. Delicious. Wish I would have thought of such a thing...
Out of respect for Lori's blog, I will refer you to her blog for the original recipe. I did NOT add the chocolate drizzle/additional sprinkling of chocolate chips.
To keep up with "keeping it simple", these would be super easy if you simply used a box mix for the brownie portion. Also, my family likes chocolate chip cookie dough without too many chocolate chips, so I only used half the amount in the cookie dough batter.

Guilt Free Dessert
As I mentioned in my Poppyseed Chicken recipe, I have just found out that my cholesterol is sky high. At 32 years young, I am now reading labels like crazy. I found a brownie mix that is no fat, no cholesterol (I know, sounds real yummy...you feeling the sarcasm?) Anyway, you use fat free vanilla yogurt to make the batter. I made a pan of them and served the brownies still warm, topped with fat free, cholesterol free frozen yogurt. It was actually very tasty AND the girls liked it too. My husband has yet to try them. I'd definitely make them again. Just thought I'd share.

Brownie Bites
This isn't really a recipe, but rather another dessert to pair with the yummy frosting from my previous post.
Simply prepare a brownie box mix as directed. Line mini muffin pan with mini muffin liners and fill with brownie batter. Bake at 350 for about 15 minutes. When cool, frost with previous post frosting recipe and add sprinkles. I put my frosting in a pastry bag and piped it on because it is much faster than spreading with a knife AND looks prettier.
