Cherry Crisp (5 ingredients)

My husband sent me a recipe on FB that someone else had posted.  If you know my husband, that is somewhat comical.  So, with his request, I made it...TWICE this week.  So simple, so yummy.



1/2 c butter (I used cold, cut into small pieces)
1 c brown sugar
1 c flour
1 c oatmeal (I used old fashioned once, and quick cook once...I preferred the old fashioned)
1 can cherry pie filling
(vanilla ice cream)

Mix the first four ingredients together, until crumbly.  Press half of the mixture into a pie plate.  Add can of cherry pie filling on top of that.  Crumble remaining mix over the top.  Bake at 350 degrees for 30 minutes.  Spoon into bowls while still warm and top with vanilla ice cream.

Oatmeal Crackles


Ellie insisted on making cookies with oatmeal. But, she didn't want chips of any kind OR raisins...so as I looked through our church cookbook, I found these.



1 1/2 c brown sugar
1 c oil
1 T vanilla
2 eggs
2c flour
1 1/2 tsp baking soda
1 tsp salt
3 c quick oats
1/4 c sugar

Beat first four ingredients until smooth. Add flour, baking soda and salt. Mix until well blended. Stir in the oats with a spoon. Measure level tablespoons of the dough, form into a ball, and roll in the 1/4 c sugar in a small bowl. Place 2 inches apart on a greased cookie sheet. Bake at 375 degrees for about 8 minutes. Leave on pan for 1 minute before removing to a wire rack to cool.

Bert's Best Blueberry Oatmeal Bars


We're talking Bert as in Bert & Ernie...this recipe also comes from "C is for Cooking: Recipes from the Street". I had blueberries that I needed to use up AND I was looking for something that Ellie could help me with.

1 1/2 c flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 c brown sugar
1/2 c granulated sugar
1 stick butter or margarine
1/2 c oil
2 eggs
1 tsp vanilla
3 c oats
1 pint fresh blueberries

Cream together sugars and butter until fluffy. Beat in oil, eggs, and vanilla. Add flour, cinnamon, baking soda, and salt. Mix in oats gently. Then carefully mix in blueberries as to not "smoosh" them.

Spread batter into greased 9 X 13 pan. Bake at 350 degrees for 30 to 35 minutes. Cool and cut into 24 bar cookies.

*note: even though is says "bar cookies", they are very moist and cake like. Not condensed like a bar cookie.

Raisin Honey Chews





These were my favorite cookies growing up. I always requested these when ever my mother made cookies. Not sure where she got the recipe, but she passed it along to me when I was in college. My husband and kiddos love them too. I like to pretend that they are really healthy because they contain oatmeal and raisins.

3/4 c shortening
3/4 c sugar
1/2 c honey
1 egg
1 1/4 c flour
1 t baking soda
1/2 t salt
2 c oats
1 c raisins

Cream together the first four ingredients
Add the next four ingredients
Stir in raisins

Drop by spoonful onto cookie sheets
Bake at 375 degrees for 8 to 10 minutes

(*Note: almost always mine get really flat. Today, for some reason, they didn't. Could it be because I just bought new baking soda?)

Baked Oatmeal


I got this recipe from a local mom that I met at the library. My 3 year old loves it as do I.

3 c oatmeal
1 c brown sugar (although I only use 1/2 c)
1 tsp baking soda
2 tsp baking powder
2 eggs
1 c applesauce
1 c milk

Mix all ingredients together. You can add fruit, nuts, and/or chocolate chips.

Bake at 350 degrees for 30 minutes in a greased 8 X 12 pan.

It is very cake like. Cut in squares and serve with a dollop of whipped cream/cool whip.
