Chocolate Chip Banana Pancakes


One of my all time favorites is "breakfast for dinner". We do this more often than I'd like to admit. French toast is great for getting rid of old bread and THIS recipe is great for getting rid of brown, mushy bananas.


Chocolate Chip Banana Pancakes

1 c flour
1 egg
1 c milk
1 to 2 mashed bananas
2 T oil
1 T sugar
1/2 tsp salt
1 T baking powder
cooking spray
chocolate chips

Mix first 8 ingredients together. Spoon on hot, sprayed griddle (approx. 1/4 c per pancake). Sprinkle with chocolate chips before flipping. Serve with maple syrup, spray whipped cream, and fresh berries.

  3. My girls were so excited about this one that we ate dinner at 4:45pm! The oldest even told her teacher what we were having for dinner! Well, I'll be honest and say that I was very nervous about these when I was finished with the batter. It was runny, as compared to the bisquick that I usually make...so maybe this is normal. Regardless, I was still nervous. I started with the recommended 1/4 and found that to be a little too much, so I used less. Much to my surprise, they rose beautifully and once flipped, were gorgeous pancakes! I have never seen my four year old eat soo fast in her entire life. She inhaled her first and begged for seconds before any of us were finished!! That has never happened. We all loved them and will be making them on many Sat. mornings to come. My husband doesn't do breakfast for dinner (he was gone tonight, which was also a treat for us, because we all love breakfast at night!) Thanks Nicole!
